° S o u t h B o h e m i a h a s i t s inimitable and specific charm. Intersected with creeks, rivers, and count less lakes over the entire region, the countryside rises from flatlands in the west towards the wooded hills known as Czech Canada, as if wishing t o s h o w o f f m a n y b e a u t i f u l aspects of nature all at once in a tiny area of land. This is where you find the town of Jindřichův Hradec.

The origins of Jindřichův Hradec a r e l i n k e d t o t h e e x i s t e n c e of an ancient S lavic fort i f ied

settlement, which became, from at least the 10th century, a centre of administration and commerce, as well as an important strategic point in the south of Bohemia. The earliest mention of the city d a t e s b a c k t o t h e y e a r 1 2 2 0 , when the estate of Jindřichův H r a d e c w a s o w n e d b y t h e founder of the Lords of Hradec, J indřich I , who also gave the name to the town.

I t was J indř ich ’s dec i s ion to have a Gothic castle built on the grounds of the former fortified s e t t l e m e n t . F r o m t h i s t i m e

o n , in the mid-13th century, the surroundings of the castle, formally a small trading and business community, grew to a sizeable town.

What to seeWhen visiting the town a definite must is the castle. The complex of buildings forming the state-owned cas t le and chateau of Jindřichův Hradec is the third largest of its kind in the Czech Republic . Spread out on over 3 hectares of land, the cast le has 320 rooms, for which the management o f the complex

holds over 500 keys. Its interiors c o n t a i n a b o u t 1 0 , 0 0 0 o b j e t s d’art , and approximately the same number of books. From an architectural perspective, the cast le was original ly bui l t in Gothic style, becoming one of the most prestigious buildings o f i t s k ind . Qui te unique , in the architectural sense, is also the castle’s largest Renaissance structure, known as the Adam Building, with partly preserved o r i g i n a l i n t e r i o r e l e m e n t s i n t h e R e n a i s s a n c e s t y l e . I t i s c o n n e c t e d t o t h e a d j a c e n t building with two-level arcades.

But the town has some more attractive sightseeing points. In the northeastern corner of the town centre is one of the most remarkable historic treasures o f J i n d ř i c h ů v H r a d e c , t h e former cloister and church of St. John the Baptist, which was later a hospital. The centrally situated Peace Square (Mírové náměstí) in Jindřichův Hradec is dominated by the originally Gothic Town Hall , which has been rebuilt several times. The landmark o f the o ld town i s the tower of the Church of St Mary the Virg in . The c i ty o f Jindřichův Hradec has retained i t s m e d i e v a l c h a r a c t e r a n d authentic feel.

The Beer TrailA very original way to spend your time in the South Bohemia re g i o n i s t o f o l l o w t h e b e e r t r a i l . C z e c h s c o n s u m e m o s t beer in the world and there are historical reasons for this. Beer w a s t h e m o s t p o p u l a r d r i n k amongst the Celts, who settled in the region of South Bohemia before the Slavs and Germans, who inherited the love of this drink. On the beer trai l there are eight operating breweries that can be visited, of which two are so-called mini-breweries or brewing yards. Try some local beer and specialities and find o u t e v e r y t h i n g a b o u t l o c a l brewing!

Walking and biking

The countryside of South Bohemia is most perfect for biking

as well as walking tours, as there are thousands of kilometres

of tourist trai ls for walkers and cycle paths through this

region. These trails lead through numerous forests, marshland,

mountains, deep valleys and artificial lakes on the Vltava river,

showing an extraordinary varied palette of landscapes. There

are also ideal conditions for water tourism on the Vltava,

Otava, Lužnice and Blanice rivers. It’s no wonder that South

Jižní Čechy mají svůj nenapodobitelný, specifický šarm. Celý

region je protkán zátokami, řekami a nespočetnými jezery, kra-

jina se zvedá z rovin na západě směrem k zalesněným kopcům

známým jako Česká Kanada, jako kdyby chtěla předvést

všechny přírodní krásy. A právě tady najdete město Jindřichův

Hradec. Počátky Jindřichova Hradce jsou spojeny se starověkým

slovanským opevněným osídlením, které se od 10. století stalo

centrem administrativních a obchodních aktivit, stejně jako

důležitým strategickým bodem na jihu Čech. Nejranější zmínka

o městě sahá do roku 1220, kdy panství Jindřichův Hradec

vlastnil zakladatel rodu Pánů z Hradce, Jindřich I, který také dal

městu jméno. Jindřich rovněž rozhodl o stavbě gotického hradu

na základech bývalého slovanského osídlení. Od poloviny

13. století začalo v okolí hradu vyrůstat středověké město.

Co si prohlédnout

Nezbytná je samozřejmě návštěva hradu. Komplex budov stát-

ního hradu a zámku Jindřichův Hradec je třetí největší v České

republice. Prostírá se na ploše více než 3 hektarů, má 320 míst-

nosti, od nichž má vedení hradu celkem víc než 500 klíčů. Jeho

interiéry obsahují asi 10.000 uměleckých předmětů a přibližně

stejné množství knih. Ale ve městě naleznete i další turisticky

atraktivní místa. V severovýchodním rohu městského centra

stojí jeden z nejvýznamnějších historických klenotů Jindřichova

Hradce, bývalý klášter a kostel Sv. Jana Křtitele, později nemoc-

nice. Centrálně umístěnému Mírovému náměstí dominuje

původně gotická radnice, která byla několikrát přestavěna.

Nad staré město se vypíná věž kostela Panny Marie.

Pivní stezka

Velmi originální způsob, jak strávit čas v jihočeském

regionu, je následování pivní cesty. Češi konzumují nejvíce

piva na světě a má to své historické důvody. Pivo bylo

nejpopulárnější pití mezi Kelty, kteří se usadili v Jižních

Čechách před Slovany a Germány. Ti od nich převzali lásku

k tomuto nápoji. Na pivní stezce najdete osm funkčních

pivovarů, které lze navštívit, dva z nich patří mezi tzv.

minipivovary či pivovarské dvory. Zkuste nějaké lokální pivo

a speciality a zjistěte vše o místním pivovarnictví!

Procházky a cyklistika

Jihočeský venkov je tím nejdokonalejším místem pro cyklistiku,

stejně jako pro vycházky. Regionem vedou tisíce kilometrů

turistických cest a cyklostezek. Můžete si to namířit přes lesy,

bažinatou krajinu, hory, hluboká údolí a umělá jezera na Vltavě.

Ideální jsou i podmínky pro vodní turistiku na Vltavě, Otavě,

Lužnici a Blanici. Není divu, že Jižní Čechy se řadí mezi nejvíce

navštěvované české regiony.

CORINTHIA TOWERS HOTEL INVADED BY LOBSTERSCorinthia Towers Hotel was invaded by lobsters during their “Red Lobster Night, part 3”. As the name suggests, this successful event was held already for the third time! For the purpose of the event, the Executive Chef, Mr. Martin Jiskra, imported 1 ton of fresh, live lobster directly from Halifax, Canada, to Prague to be able to guarantee “unlimited” lobster supply to the over 230 guests of the evening. It was probably the largest lobster import for one event to the Czech Republic ever. Other highlights of the night was a “Lobster Pyramide” made from fresh lobster as well as a huge lobster-shaped cake on display. The event got an educational note by some interesting facts about lobsters that could be found in frames scattered all over the buffet tables. Waiters were wearing red aprons with lobster logos and red gloves in the shape of lobster claws. The long tables for up to 40 people were decorated with sand, mussels and lobster-shells to support the theme. A selection of fine wines was presented by a sommelier and guests had the opportunity to taste the wines before buying them. The selection of lobster delicacies included fresh lobsters cooking station, “live” wok cooking station, buffet section with starters (lobster canapés, lobster medallions, lobster borquettes, lobster tian), fine cream soup Bisque d'Homard with lobster, ravioli and Hennessy scent, selection of lobsters: á la Américaine (lobster, shallots, tarragon, tomatoes), Cardinal (lobster, truffles) , Chemise ( lobster with maitre d'hotel butter) , Henri Duvernois (lobster, mushrooms, butter and sherry), carnaroli risotto with lobster, lobster sautéed with orange, Thermidor. Special station was dedicated to pastry specialties –sweet sushi, marzipan maroons, tomato liquer sorbet, lobster cake and much more.

INVAZE HUMRŮ V CORINTHIA TOWERSHotel Corinthia Towers byl už potřetí „napaden“ humry. Šéfkuchař hotelu, pan Martin Jiskra, pro účel této společenské a gurmánské akce objednal přímo z Halifaxu v Kanadě tunu čerstvých, živých humrů, aby mohl zajistit a garantovat jejich „neomezenou“ konzumaci pro více než 230 hostů. Šlo pravděpodobně o největší dovoz humrů na jednu společenskou akci, jaký Česká republika zažila. „Třešničkami na dortu“ byly pyramida vytvořená z čerstvých humrů a také čokoládový dort ve tvaru obrovského humra. Obsluhující personál byl oblečen do červených zástěr s logem humra a červených rukavic ve tvaru humřích klepet. Dlouhé stoly, za nimiž sedělo až 40 hostů, byly ozdobeny mušlemi, pískem a humřími ulitami, aby podtrhly atmosféru večera. Výběr vín byl prezentován hlavním sommelierem a hosté tak měli příležitost degustovat je dříve, než si některé zakoupili. Během večera měli hosté možnost ochutnat nejen čerstvé humry připravené přímo před jejich očima, speciality z pánve wok připravené našimi laoskými šéfkuchaři restaurantu Rickshaw, ale i řadu lahodných humřích předkrmů, krémovou humří polévku Bisque d'Homard a výběr z humřích delikates: á la Américaine, Cardinal, Chemise, Henri Duvernois, carnaroli risotto, či Thermidor.

KOHL & PINKEL TOUROn the 28 January the “Kohl & Pinkel tour” took place for the second time and was truly enjoyed by all participants. During a refreshing tour through the forest all groups safely arrived at the restaurant, where delicious Kohl (cabbage) and Pinkel (special German sausage) and refreshments awaited them. This special action can take place only during the winter season, and all participants enjoyed it so much that they are looking forward to the next winter season. It looks like an event to be continued....

° Springtime in the Czech capital is very charming in its own right, but try to experience one of its most beautiful aspects – the Prague gardens that re-open again after the winter closure. There are many of them all over Prague to choose from, so let’s have a look at least at some of the most beautiful!

The Vrtba Garden To g e t h e r w i t h t h r e e o t h e r B a ro q u e g a rd e n s ( Vr a t i s l a v, Schönborn and Lobkowicz), the Vrtba Garden is situated on the

slope of Petřín Hill and is one of the most precious and beautiful of Prague‘s Baroque gardens. The creation of this magnificent palace garden is associated with the construction boom around 1720. It was designed by František M a x m i l i á n K a ň k a , w h o f i r s t renovated the palace for Jan Josef, Count of Vrtba and then created the garden. Unlike the garden which retained its Baroque style without any significant changes, t h e Vr t b a P a l a c e u n d e r w e n t r a d i c a l c h a n g e s d u r i n g t h e following centuries. The statue

and sculptural decorations were c r e a t e d b y M a t y á š B e r n a r d Braun. In addition, painter Václav Vavřinec Reiner was involved in the masterpiece. The interior decoration of the Sala Terrena has survived with its original designs until today. The fresco on the vault depicting Venus and Adonis was painted by Václav Vavřinec Reiner. In 1990–98, the Vrtba Garden was completely restored, following previous structural reinforcement. The Vrtba Garden is open from April to October, daily from 10 a.m. to 6 p.m.

The Palace Gardens Below Prague CastleT h e g a r d e n s b e l o w P r a g u e Cas t le were named a f ter the last aristocratic owners of the adjacent Lesser Town palaces, but their history goes back much further than that. Some of them were established as early as in the 16th century after the town administration began selling these properties to the inhabitants of the Lesser Town. The previously plain Renaissance gardens were specially altered in the Baroque style in the 17th century. They were richly

adorned with Baroque statues, and there were fountains, water jets, a sala terrena and small pavilions. The steep terraces were skilfully interconnected with stairways and passages with arbours. Nowadays, their viewing terraces open up a wonderful v iew of Prague, and each of the nearly 30 garden terraces has a different layout and a different view. The recent comprehensive renewal of all five gardens under Prague Castle was carried out from 1992 to 2000 and it was mainly funded from state funds along with significant f inancial ass is tance from the Prague Heritage Fund which was established by His Royal Highness the Prince of Wales and President Václav Havel.The palace gardens are open from April to October, daily from 10 a.m. to 6 p.m.

Prague Castle GardensOverall, the gardens surrounding Prague Castle are the most well-known and very convenient to reach. One of them is called “the garden on the bastion” and its name recalls the medieval fortification on the northwest side of the Prague Castle. From the garden one can follow a very attractive route along the northern wing of the Castle to the Powder Bridge.

At the Powder Bridge – from a street named U Prašného Mostu (By the Powder Bridge) – is the main entrance to the Royal Garden. It was founded as early as in the 16th century, where Ferdinand I. gradually bought old vineyards around and developed a beautiful Renaissance garden from it. Today i t has the fee l of an Engl ish-style park, with Renaissance and Baroque traces.The first part of the garden ends with a terrace and a balustrade, with statues dating from around 1730. The whole garden is divided by a central square, with a fountain as a dominant feature. The fountain features a statue of Hercules fighting a dragon and dates from 1630. Another highlight is the Singing Fountain, in the most easterly part of the garden. Flowerbeds form wonderful surroundings, and it is said that the fountainsings the name of your love.The Southern Gardens are situated on the site of the fortifications of Prague Castle and since the middle of the 18th century these gardens have been called the “Garden of Paradise”.The English-style park was last reconstructed at the beginning of the 1990s. Jaro v hlavním městě je okouzlující samo o sobě, ale zkuste zakusit

jednu z jeho nejzajímavějších dimenzí – po zimní přestávce se znovu

otevírají pražské zahrady. Vybírat se v Praze dá z mnoha, pojďme se

podívat na některé z těch nejkrásnějších.

Vrtbovská zahrada

Společně se třemi dalšími barokními zahradami (Vratislavskou,

Schönbornskou a Lobkovickou) se Vrtbovská zahrada rozkládá na

svazích Petřína a je jednou z nejcennějších a nejhezčích zahrad

v Praze. Vybudování této velkolepé palácové zahrady souvisí se

stavebním rozmachem kolem roku 1720. Zahradu navrhl František

Maxmilián Kaňka, který nejprve zrenovoval palác pro Jana Josefa,

hraběte z Vrtby, a potom se pustil do zahrady. Na rozdíl od zahrady,

která si udržela svůj barokní styl bez jakýchkoliv významných zásahů,

Vrtbovský palác podstoupil během následujících staletí radikální

změny. Vnitřní výzdoba sala terreny přežila ve své původní podobě až

dodnes. V letech 1990 – 1998 byla Vrtbovská zahrada úplně zrekon-

struována. Otevřena je od dubna do října, denně od 10 do 18 hodin.

Palácové zahrady pod Pražským hradem

Zahrady pod Pražským hradem dostaly svá jména po posledních

majitelích, šlechticích z malostranských paláců, ale jejich historie sahá

mnohem hlouběji. Některé z nich byly založeny už v 16. století poté,

co městská správa začala tyto nemovitosti prodávat obyvatelům Malé

Strany. Původně skromná renesanční zahrada byla v 17. století

upravena v barokním stylu. Dnes jejich vyhlídkové terasy otevřou

báječný pohled na Prahu. Každá z bezmála třiceti teras má jiné

rozvržení a nabízí odlišný pohled na město. Nedávná komplexní

obnova všech pěti zahrad pod Pražským hradem proběhla v letech

1992 až 2000. Palácové zahrady jsou otevřeny od dubna do října

denně od 10 do 18 hodin.

Zahrady Pražského hradu

Zahrady obklopující Pražský hrad jsou nejznámější a nejdosažitelnější.

Jedna z nich se jmenuje „Zahradou na baště“ a její jméno upomíná

na středověké opevnění při severozápadní straně Pražského hradu.

Na Prašném mostě – z ulice pojmenované U Prašného mostu

– naleznete hlavní vstup do Královské zahrady. Ta byla založena

už v 16. století. Dnes jde spíš o anglický park s renesančními

a barokními prvky. První část zahrady končí terasou a balustrádou

se sochami datovanými kolem r. 1730. Celá zahrada je rozdělena

centrálním náměstím s dominantní fontánou se sochou Herkula boju-

jícího s drakem z 1630. Další atrakcí je Zpívající fontána na východ-

ním konci zahrady. Oklopují ji nádherné květinové záhony a říká se,

že fontána zpívá jméno vaší lásky. Na místě někdejších opevnění

Pražského hradu jsou Jižní zahrady, nazývané od poloviny 18. století

též Rajskými zahradami. Park v anglickém stylu byl naposledy zrekon-

struován počátkem devadesátých let. Zahrady Pražského hradu jsou

otevřeny denně od dubna do října, rovněž od 10 do 18 hod.The Vrtba Garden

° Meda Mladek, the legendary Czech art expert and benefactress, has fulf i l led her and her late husband’s dream. Three years ago, she opened the Museum Kampa – one of the most prestigious and valuable Central European art collections. Located in the reconstructed historic Sovovy mlýny building in the heart of Prague, the collection includes works of the great pioneer of abstract art, František Kupka, the Czech Cubist sculptor, Otto Gutfreund, and contemporary works (from the 1960s onwards) by prominent Central European artists from the Czech Republic, Slovakia, Poland, Hungary and the former Yugoslavia. We asked Mrs Mladek to introduce her museum to our readers in her own words: “It is a unique museum thanks to its specialisation, because we have here Central European art from the time of Soviet occupation. The artists were in a terrible situation back then - they couldn’t organize exhibitions, and couldn’t do larger and more expensive pieces of art, because they wouldn’t be paid

for it. So when, for example, the sculptor Karel Nepraš made his large statues, he had to create them with enormous self-denial, because he knew nobody would be allowed to buy them. Later, they finally allowed me to buy art in Czechoslovakia, because I paid in dollars, but even then it was difficult. ”How has your love for modern art developed?“Just read what is written on the wall of our museum – ‘If a nation’s culture survives, then so too does the nation’. These are the words of my late husband Jan. I have always loved art, but without him I would probably not be such a patriot. I studied in Geneva and when the news about the communist putsch in Czechoslovakia spread, we decided not to come back and to help Czech culture from the outside.”It is not cheap to support Czech and East European art on such a scale. How do you finance your purchases and the running costs of the museum?“You see , we have only have

money that we make or that we ‘scrounge’ from someone. We don’t really have any large sponsorship deal. Up to now, we have been successful, particularly with letting out our beautiful terrace...”How do you get ideas for new exhibitions and is i t you who decides which new pieces of art to buy?”I am friend and colleague of many art collectors, artists and directors of other museums. As I am very interested in modern art, I hope I am still familiar with it. And, indeed, I am the one who has to decide about every picture hanging in our museum, about any exhibition that we will feature. My advantage is that I have the famous abstract painter František Kupka in my collection. And because I lend his works to other museums, I can ask for virtually anything in return. “What do you consider to be the biggest success of Kampa Museum so far?“Yoko Ono’s visit. The interest of people and the media was phenomenal. In my opinion, it was partly because the people knew about the Lennon wall on Kampa – it features in every travel guide.

There are so many people that come here and ask: ‘Don’t you know where the wall is?’ This wall has helped to maintain awareness about John Lennon. When Yoko was here, her manager told me that the plane is leaving at 11 and that there will be no time to go and see the wall. But Yoko said that we must go there and that the plane will leave at 1 p.m. ‘After all, it is my plane!,’ she said. So we went. And about a hundred journalists with us.”H o w , i n y o u r v i e w , h a s contemporary Czech art changed since the Velvet Revolution of 1989?“I still think that better things were made before the revolution. B e c a u s e i n t h o s e d i f f i c u l t t imes only the best endured. The weaker artists left art for something else. Today’s Czech art is unfortunately not very original. When I was visit ing the ateliers after the revolution, I often thought: ‘I have seen this somewhere already!’ And then I saw a catalogue of a successful Italian artist lying beside it . . . Young Czech artists think that if they do something similar to a successful colleague, that they

will also become successful. I was trying to stress so much that this is an absolute mistake. ‘Please please forget what you see, and do what you feel!’”Do you think thus that the Czech a r t o f t o d a y h a s n o f a c e , n o direction?“I do not dare to evaluate it in its entirety, because I am not able to follow the youngest generation in detail, but this is not my task

anyway: as soon as they become a little bit successful and they are featured in some gallery, I will take notice. But of course we have several young Czech artists in our collection. I just hope they will grow out of this copying phase. They do not lack self-confidence though: new pieces of art cost three t imes more here in the Czech Republic than in Poland or Hungary...”

Muzeum Kampa Medy Mládkové

Meda Mládková, legendární česká odbornice a mecenáška

umění, si splnila své a manželovo životní přání. Před třemi

lety otevřela Muzeum Kampa – jednu z nejprestižnějších

a nejcennějších sbírek východoevropského moderního

umění. Sbírka umístěná v rekonstruovaných prostorách

Sovových mlýnů na pražské Kampě zahrnuje práce velkého

průkopníka abstraktního umění Františka Kupky, českého

kubistického sochaře Otto Gutfreunda a práce prominentních

středoevropských umělců z České republiky, Slovenska, Polska,

Maďarska a bývalé Jugoslávie. Požádali jsme paní Mládkovou,

aby muzeum představila čtenářům svými vlastními slovy:

„Je to svou specializací jedinečné muzeum, neboť tu

máme středoevropské umění z doby okupace ruskými

vojsky. Umělci tehdy byli v hrozné situaci, nesměli vys-

tavovat a nemohli dělat velká díla, protože by jim to

nikdo nezaplatil. Takže když například Karel Nepraš

tehdy udělal své velké sochy, musel je dělat s obrovským

sebezapřením, protože věděl, že je neprodá. Mně pak

dovolili v Československu nakupovat, protože jsem platila

v dolarech, ale i to byl problém...“

olive oil, 50mg of sliced lemon,

fresh tarragon and rosemary, salt Cut the salmon f i let into 12 pieces. Heat oil to 125 degrees Celsius; add sliced lemons, herbs and salt. Then add the salmon and cook over low heat of about 120 degrees. The salmon should be ready in 10 minutes.For olives topping: 120g of pitted black olives, 60g

of anchovy filets, 10g of capers.

Put all ingredients in blender and form a smooth paste. For white beans topping: 160g of cooked white beans,

40g of olive oil,

white pepper, salt.

Put everything in blender and form smooth paste. For tomato topping: 200g of peeled tomatoes,

50ml of olive oil, fresh thyme,

basil, garlic, crushed black

pepper, salt, sugar.

Heat the oil in a deep saucepan and simmer garlic and herbs over low heat. Add cubed tomatoes and simmer again until completely melted. Season with salt, sugar and crushed black pepper.For rucola emulsion: 40g of rucola leaves, 80ml of olive

oil, 50g of cooked white beans,

100ml of chicken broth, salt.

Poach the rucola leaves in salted water, cool it and put it in blender. Add beans, oil, salt, pepper and form a smooth paste. Add the broth to deliver the right consistency to the sauce.For zucchini: 280g of zucchini, 40ml of olive

oil, salt, crushed pepper.

Cut zucchini across in half and then lengthwise in 6 pieces. Season with salt and pepper, sprinkle with oil and quickly grill from both sides.

Set aside - First place the 3 pieces of grilled zucchini on the plate. On zucchini put three pieces of salmon. Top each with a quenelle o f o l i v e , b e a n s a n d t o m a t o toppings. Garnish with potato chips, pour around the emulsion and finish with lemon and cherry tomatoes.

First fry the sliced coconut in a dry pan until it turns brown. Add the beef broth and heat it until it starts boiling. Next fry the chopped onions and garlic in

another pan, add small pieces of lemongrass and fresh ginger and pour it over the mixed coconut sauce. Boi l i t for 15 minutes . Add the salt and a bit of sugar and strain it. Cut the beef into small fine slices, steam it in the beef broth and strain it . Heat the coconut milk in a pan and add the meat, lemongrass, bay leaves and the rest of the sauce and cook it all together for a few moments. Add some fried onions before serving. We recommend Jasmine rice as a side dish.

Osmažte rozkrájený kokos v suché pánvi, aby zhnědl. Přidejte vývar

a zahřívejte až na bod varu. Potom míchejte, dokud omáčka nezjem-

ní. V další pánvi osmažte nakrájenou cibuli a česnek. Přidejte malé

kousky citronové trávy, čerstvý zázvor, kořen Alpinia officinarum

a přelijte kokosovou omáčkou. Nechte 15 minut vařit. Přidejte sůl

a trochu cukru a omáčku přeceďte. Hovězí maso nakrájejte na malé

tenké plátky, uvařte je ve vývaru a sceďte. V pánvi ohřejte kokosové

mléko, přidejte maso, citronovou trávu a bobkové listy. Vlijte zbytek

omáčky a chvilku povařte. Před podáváním přidejte osmaženou

cibuli. Servírujte s jasmínovou rýží. Restaurant Rickshaw je otevřen

Confity z lososa se 3 omáčkami, cuketami a rukolovou zálivkou

600 g filetů z lososa nakrájíme na 12 kousků. Zahřejeme olej na 125

stupňů, přidáme pokrájené citrony, koření a sůl. Pak vložíme lososa

a zvolna pečeme při teplotě 120 stupňů. Na olivovou omáčku si

připravíme 120 g vypeckovaných černých oliv, 60 g ančoviček, 10 g

kapar. Na omáčku z bílých fazolí potřebujeme 160 g bílých fazolí,

40 ml olivového oleje, bílý pepř, sůl. A na rajčatovou omáčku 200 g

oloupaných rajčat, 50 ml olivového oleje, čerstvý tymián, bazalka,

česnek, drcený černý pepř, sůl, cukr. Všechny ingredience - na

každou omáčku zvlášť - vložíme do mixéru a rozmixujeme na jem-

nou pastu. Rozehřejeme olej a zvolna restujeme česnek a koření.

Přidáme na kostičky nakrájená rajčata a vaříme, dokud se úplně

nerozpustí. Osolíme, přidáme trochu cukru a pepř. Na zálivku nach-

ystáme 40 g rukoly, 80 ml olivového oleje, 50 g vařených bílých fazolí,

100 ml kuřecího vývaru, sůl. Rukolové lístky krátce povaříme ve slané

vodě, necháme vystydnout. Vložíme do mixéru spolu s fazolemi,

olejem, solí, pepřem a rozmixujeme do jemné pasty. Pak přidáme

vývar a rozmícháme. Pak potřebujeme 280 g cuket, 40 ml olivového

oleje, sůl, drcený pepř. Rozkrájíme cukety napůl a pak podélně na 6

kousků. Osolíme a opepříme, postříkáme olejem a rychle ogrilujeme.

Na talíř položíme tři kousky grilovaných cuket, na ně plátky lososa.

1.4.-23.4.EASTER MARKETS The largest Easter markets in Prague take place on the Old Town Square and Wenceslas Square. On the Old Town Square there will also be a stage set up with various performances, such as concerts by folklore ensembles from around the country. On Wenceslas Square egg painters from all corners of the Czech Republic will be giving demonstrations of their art and various traditional decoration techniques. Beside coloured eggs, Easter birch whips and stalls selling traditional Czech products, one can also enjoy a wide choice of nice food on city squares, which are decorated for Easter.

5 MarchYAMATO, DRUMMERS OF JAPAN Yamato was based 1993 in Japan with the intention to bring a bit of Japanese flair into the world. For more than 10 years now the group has been touring all around the world, with huge success. They have been giving their unique performances at over 1000 concerts in Asia, Europe and America; now they will give one concert in the Czech capital, and Corinthia Towers Hotel is the proud partner in this event. GALERIE EXHIBITIONOne of the most successful artists in the Czech Republic came

to this country with few possessions and began selling his work,

alongside artists on the Charles Bridge. But the quality of his work

shone through and Onishenko quickly went on to open his own

gallery where one can explore his landscapes, see corners of his

forests, fly with his birds, gallop with horses, explore Gothic court-

yards or soar with him over the rooftops of Prague. Come and see

E ASTER I N PRAGUEThe Easter season in Prague is always something very special. There are lots of Easter customs, like for example colouring eggs or

hiding small baskets containing eggs and sweets, traditions that you will probably know from home. But one very original and traditional Czech habit is the Easter birching. Easter Monday is the only day during the year when boys are officially allowed to ”beat“ all girls, and they prepare for this days before with a nicely decorated bunch of birch sticks. The girls must give the boys some coloured eggs as a reward.

The Easter weekend is packed with events for you and your parents. One of the most beautiful is the traditional Křivoklátský jarmark (Křivoklát Market), to which a special train pulled by a steam engine will set off from Prague (www.krivoklat.cz). Another great idea for a family trip on Easter is to visit “The Wallachian Open Air Museum“ that will demonstrate
