    The winery:Alexander winery was founded by Mr. Yoram Shalom (Owner and wine maker) in Tel-Aviv (1996), and

    was relocated (1999) to Beit Yitzhak, a Moshav in Hefer Valley. The winery began as a small familyventure but slowly grew into a very successful, highly acclaimed boutique winery. Since the 2006vintage the winery products are Kosher and in 2007 the wines are also Kosher under the supervisionof the Beit Joseph organization.At the beginning the winery produced ~ 12,000 bottles (1999), 2002 ~35,000 and since the 2005vintage ~ 50,000 bottles. The 2009 vintage is expected to reach ~ 60,000 bottles.

    The winemaker.Yoram Shalom began acquiring his love for wine and winemakingas a child watching his father, Alexander Shalom, making wine athome. His interest and curiosity to learn and master winemakingdeveloped through reading, experimenting, visiting and consultingvintners and winemakers in Israel and abroad. Finally, his urge and

    burning desire to make wine overcame him and he decided toswitch to full time winemaking. He resigned his position as aphotographer with the Israeli Television and became a full timewinemaker and a winery owner.

    From a hesitant start, his dedication and drive for perfection brought his high quality wines to thepublic's notice, became highly acclaimed, sought after and known as top quality wines in Israel as wellas abroad.

    The winery operational policy.The basic concept that drives Yoram Shalom in his commitment to excel in his wine making efforts isto combine traditional and modern wine production concepts with modern, up to date technologies.

    Thus, his efforts are directed firstly by the belief that the secret of high quality wine begins, first andforemost, with the true expression of the vineyards Terroir. Convinced that quality grapes are a

    prerequisite for quality wine production, he looked for special vineyards to serve as sources for hiswinery. Three vineyards were selected with special attention to their elevation, soil type and depth,slope and slope aspect relative to the sun, wind directions and force, planting density and rowdirection (Vineyards terroir). Furthermore, he concluded that a successful winemaker must work in fullcooperation with the vineyards managers and at the appropriate time take the lead, decide the rightdecisions in order to obtain the best quality grapes. Secondly, the winery is to be operated in a way to

    enable the winemaker to groom and husband, the high quality grape harvest throughout the wineproduction processes in a way that ensures a maximal retention of the grape attributes and qualities ofthe wine.

    The vineyardsThe need for high quality grapes and grape quality diversity (having in the back of his mind futureblends of great complexity), combined with the basic concept of a vineyard site terroir were the drivingmotives for the winemaker vineyards selection. The winery draws grapes for its production line fromthree specific vineyards. All three vineyards, known for their terroir, are located in the Upper Galileewine region.Cfar Shamai vineyard: The vineyard, planted in 2000, is located on an eastern, north eastern slope ofHar Mitzpe Hayamim. Elevation varies between 640 to 700 m above m.s.l. The soil, overlaying a hard

    chalk and dolomite rocks, is stony, clay, red brown, Mediterranean soil, of varying depth andstoniness.The vine rows follow the terraced slope. Most of the rows are planted in east - west and some rows innorth-south direction. The rootstock used for most of the area is Ru 140 and a small section is onPolsen 1103. The planted varieties are: Cabernet Sauvignon and Merlot. The vines are trellised in aVertical Screen Position (V.S.P), planting density of 3.0 x 1.0 m (3333 vines/ha). Average annualrainfall is about 820 mm, and summer irrigation varies according to soil depth and transpiration around300 mm rainfall equivalent. Due to the site's topographic position layout, the vines are cooled by thesea breeze during most of the day, while at night the vines are at low temperature since the vineyardserves during the night as a cold air drain for the Har Miron region.Yield varies between 8 to 10 T/ha.Kerem Ben Zimara (South): The vineyard, planted in 1988 and new sections in 2007 and 2008, islocated on a plateau south of Har Yohanan. Site elevation varies between 810 to 840 m above m.s.l.

    The soil is a brown black Mediterranean clay soil of basaltic origin. The soil is rather deep with basaltstone, the amounts of which increase with depth. The vines are planted on Richter 110 rootstock, rowdirection varies. Sections of the vineyards are planted in north south direction and other sections ineast- west direction. Varieties include Cabernet Sauvignon, Merlot, Syrah, Petit Verdure, Mourvedre,Sauvignon Blanc and Chardonnay. Planting density is

    uniform, 3.0 x 1.5 m (2223 vines/ha), trellised in a V.S.P. mode.Annual average rainfall is 700 mm, and summer irrigation variesaccording to transpiration and soil water storage around 180 mm ofequivalent rainfall.Yields vary between 6 to 10 T/ha depending on the variety andyear.

    Kerem Ben Zimara (West of Kerem Ben Zimra - Padita): Thevineyard, planted in 1997-8, is located, west of moshav Kerem BenZimra. The vineyard is planted on the edge of a ridge and then slopes rather steeply toward the north -north east. Elevation varies between 780 to 740 m above m.s.l. The soil, overlaying hard chalk anddolomite rocks is a stony, well drained, red brown Mediterranean clay soil, of varying depth andstoniness. The vine rows in the vineyard are planted on a terraced slope; following the east westdirection. The vines are grafted on Richter 110 rootstock. The planted varieties are: CabernetSauvignon and Merlot. The vines are trellised in a Vertical Screen Position (V.S.P), planting density of3.0 x 1.5 m (2223 vines/ha). Average annual rainfall is 720 mm, and summer irrigation variesaccording to soil depth and transpiration around 200 to 250 mm rain fall equivalent. Due to the sites

    topographic layout, the vines are cooled by the sea breeze during most of the day and enjoy cold air,draining down the slope during the night.

    Yields vary between 7 to 10 T/ha depending on the variety andyear.All three vineyards are operated under shared management (thevineyard owner and the winemaker) during most of the year. As thegrapes reach the veraison stage and start ripening, the winemakertakes over and directs all the operations and examinations required

    to ensure that the ripening grapes will reach their best possiblequality at harvest time.

    Wine production.Wine production is preceded by a crucial decision: setting the right time for the grape harvest. Grapesare sampled sporadically, the concentrations of their major constituents (sugar, total acidity, pH, skinand kernels color and taste) are determined before full ripening has been reached. The basic drive isto attain a harmonious ripeness, namely good sugar concentration (~ 25-26 Br0), low pH (~ 3.5), and agood to complete phenolic ripeness. The winery staff, under the direct guidance of the winemaker isresponsible for these sampling and analyses.Once the grapes have reached the desired degree of ripening the harvest commences immediately.

    Wine production then begins by harvesting the grapes and their transfer to the winery. The grapes arehand picked during the late night early dawn hours. The harvested clusters are checked for flaws andfungal, insects or mechanical spoilage,

    before packing for shipment. The chosen clusters are then placed in small boxes, loaded into arefrigerated truck, and shipped to the winery.Upon arrival at the winery gate, the grapes in the boxes are unloaded onto a conveyer and arerechecked for spoilage or damage caused by foul handling and transportation. The grape loads fromeach vineyard section undergo berry separation and crushing and the must is processed separatelyfrom other vineyard lots. Must samples are taken for sugar, total acidity and pH determinations. Toeach volume of must, bi-sulfite is added during the crushing process, the must is transferred intoseparate stainless steel tanks for cold maceration at 5 to 8 degrees C, for two days, after which,

    Tartaric acid (if needed since acidity corrections are seldom needed), yeasts and vitamins are added,mixed well, must temperature is raised to 160 and must fermentation starts.During fermentation, the fermenting must is mixed and rotated to wet the cap every four hours. Oncein two days the fermenting liquid is siphoned to a separate tank, the cap is broken and the liquid isre-siphoned into its original tank. During fermentation temperature is allowed to creep up until itreaches, 260 to 280C and is stabilized until the alcoholic fermentation ends.After the alcoholic fermentation ceases, each tank is drained (free run) and the remaining mixture ispressed to separate the remaining wine from the marc (grape remains). Free run and pressed wines,in separate tanks, are then cooled to 200 C to allow the initiation of the malo-lactic fermentation.Laboratory tests and chromatographic methods are used to follow and to determine the end of themal- lactic fermentation. At the end of the Malo-lactic fermentation, each wine volume is racked andstored in new French and American Oak barrels for maturation. The barrels are placed in a cool cellar(~ 160 C), where low humidity is maintained in order to allow high evaporation losses leading to

    enhanced aromatic, more concentrated, and tastier wines. The ratio between French and Americanbarrels depends on the variety and the specific wine.

    During the first year, the wine in the barrels is racked four timeswhereas during the second year only twice. As the wines mature inthe barrels, sporadic sampling and tasting is carried out in order totrack and control changes in the maturing wine.Blending sessions are initiated when Yoram Shalom (the winemaker), feels confident that the wines of a given vintage are readyto be blended into the best wine blends possible for that year. Thefinal unfiltered blends are stabilized for 48 hours at 50 C and thenbottled and placed in storage for a period of 6 to 12 months at 150 180 C before being exposed to the market.

    About Us

    The Story of Binyamina Winery

    Binyamina Winery was established in 1952 by Joseph Zeltzer, who immigrated to Israel with a burning desire to produce wineas he did in the country of his birth, Hungary.

    Initially called Eliaz Winerynamed after the owners son who fell in battle during Israels War of Independence, the winerystarted out in a region considered at that time to be Israels wine region.

    In fact the winerys current premises, in the heart of the town of Binyamina, has a history that goes back to it pre-winery days. In1925 a perfume factory was establish by Baron Benjamin de Rothschild, after whom the town of Binyamina is named. Thefactory site was chosen due to the jasmine plants that grew profusely in the area, and which were needed to produce perfumeextracts. The enterprise failed and the factory was abandoned in 1937. Until Israels independence in 1948 the building and theslick under it were used intermittently as a safe house for members of the Hagana (pre-state defense force).

    After independence, Joseph Zeltzer found himself in Binyamina - close to the vineyards in the heart of a famous wine-growingregion and in a building with an interesting history in order to fulfill his aspiration to produce sweet wines and liqueurs.

    Initially all the winerys grapes came from local vineyards in the Binyamina region. The winery produced sweet wines, simpletable wines and liqueurs. As all winegrowers at the time were bound to the Carmel Mizrahi cooperative, it was David BenGurion, the first prime minister of Israel, himself who intervened on behalf of Mr. Zeltzer, and a law was passed that allowed himto receive a small amount of grapes for wine production. The winery was mainly known for its quality liqueurs and brandyproduced under the Hard Nut Liqueur label, in honor of Ben Gurion who was famously known as a hard nut to crack.

    Although always privately owned, over the years the winery passed through several hands and underwent manytransformations. Its various owners included business people involved in banking, real estate and cinema who always regardedthe winery as an Israeli gem and meeting point where agriculture, industry and Zionism converged. The last owners, movieproduction executives, purchased the winery at the beginning of the 1990s and gained full control in 1996. They immediately

    invested enormous resources in transforming Binyamina into one of Israels leading wineries. This included 14 years ofinvestment in vineyards to obtain the best quality raw material, in wine production equipment and in creating one of Israelsfinest barrel cellars. They also renamed the winery, which has gone under the name Binyamina Winery since the mid-nineties.

    Another landmark in the winerys history was its purchase in 2008 by a group of private investors, owners of the Hatzi Hinammarketing chain, who recognized the winerys inherent and growing potential and identified with the winerys vision of becominga leader in Israels wine sector. Since then the new owners have invested unstintingly in the winerys vineyards, premises,equipment and human capital.

    The Vineyards Good wine begins in the vineyardBinyamina Winery has come a long way from the days when Joseph Zeltzer obtained his grapes from winegrowers in theregion. Today, almost sixty years later, the winerys vineyards are spread throughout the country from the Golan Heights in thenorth, through the finest Upper Galilee (Kerem Ben Zimra, Alma, Emek Kadesh) and Lower Galilee (Kfar Tabor) vineyards andthe Binyamina region, down to the Jerusalem Hills and Karmei Yosef. Binyamina also has vineyards around Gedera, substantialvineyards in the Lachish region and its southernmost vineyard is located in Mitzpe Ramon in southern Israel.

    Binyamina Winerys team, headed for the past 14 years by CEO Ilan Hasson and Chief Winemaker Sasson Ben Aharon,understood that good wine begins in the vineyard and for the past ten years have been investing precious resources in locating

    both the best vineyard plots in different regions and the best farmers the professional winegrowers who provide us with thebest quality fruit of the vine. In line with the Binyaminas uncompromising approach to the quality of its raw materialsthegrapesthat go into producing its quality wines, the winery even employs an in-house agronomist who provides professionalservices to all the winerys winegrowers. The winerys investment in its vineyards includes state-of-the-art information systemsthat provide information on temperatures and soil types directly to the computer as a means of locating prime vineyard plots.

    The Wine

    Binyamina Winery is the fourth largest winery in Israel and it produces some 2.8 million bottles annually under several labels.These are delivered to specialty wine stores, marketing chains, hotels, catering companies and restaurants in Israel and abroad.

    The winery currently produces wine under four main labels - The Chosen, Binyamina Reserve, Yogev and Teva, as well asspecial limited edition wines and liqueurs. We regard each of our wine labels as reflecting a part of an entire enterprise thatstrives for and ultimately achieves product perfection.

    Our Labels

    The Chosen a reflection of our winemakers creativity. This is Binyamina Winerys high-end label that includes six wines, eachnamed for one of the Hoshen Stones (the biblical term for the carefully chosen precious stones set in the breastplate of the HighPriest). During the production process the winemaker meticulously oversees the manual harvesting and sorting of the grapes,production processes that rely on gravitational forces rather than on mechanical processes, and the wines long aging.

    Binyamina Reserve - the winerys flagship label which reflects the vineyard and its qualities. This label includes eight red andwhite varietal wines produced from grapes that grow mainly in our Upper and Lower Galilee vineyards. The unique expressionof vineyard qualities is the dominant feature in these wines.

    Yogev Binyaminas Yogev label is tribute to our winegrowers. In Hebrew, Yogev means farmer, toiler of the soil. This labelreflects the winegrowers contribution to the production of quality wines. Yogev wines are aged in used barrels in order topreserve the natural qualities of the winegrowers fruit. As a token of our appreciation, we have included the winegrowersnames on the back labels of all Yogev wines.

    Teva Binyaminas most popular label that we regard as reflecting the consumer. This label includes varietal wines, eachattributed with a nature that wine consumers can relate to while we cater to the personal taste of each consumer.

    Binyamina Winery strives to promote a wine culture in Israel and is regarded as a daring pioneer in the wide range of varieties itoffers its customers under its different labels, which include classics from Cabernet Sauvignon and Merlot to Shiraz,

    Chardonnay and Emerald Riesling as well as less known varieties such as Pinotage, Tempranillo and Viognier. The wine was aged for15 months in French oak

    barrels. It has a deep purplecolor, with an aroma of blackcherries, spices, leather andtruffles. The wine is elegant,well-balanced and has beenmade for cellaring. The drawingon the label is of ZichronYaacov Wine Cellars.

    CARMEL VINTAGECarmel Vintage is made in the styleof a vintage port from Petite Sirahgrapes, grown in the Judean Hills. It

    is fortified by the addition of grapealcohol during fermentation, and isthen aged for 18 months in smallFrench oak barrels. Carmel Vintagehas a deep purple color, and anaroma of blackberry, dried fruits andbitter chocolate. It has a rich longfinish. It is a wine with excellentaging potential.

The brandy is made mainlyfrom Colombard grapes, doubledistilled in pot stills, and thenmatured in small French oak casks.The barrels were previously usedfor aging Carmels premium wines.Carmel 100 Brandy was firstreleased to commemorate the 100year anniversary of the founding ofCarmel. It was winner of theprestigious award: Best BrandyWorldwide at the IWSC in London in1998.

    WINE REGIONS

    Carmel has extensive vineyards throughout Israel, including some of the finest individualvineyard sites in the country. Israel has five registered wine regions:

    GALILEEThis region, made up of the Upper and Lower Galilee and the Golan Heights, extendssouthwards from the Lebanese border and covers the north of Israel. The Upper Galileeand Golan are generally accepted as Israels finest wine growing areas because of theircooler climate and higher altitude. Elevations can be up to 1,000 meters above sea level,with snow in winter. Soils vary between being gravelly, volcanic, basalt, limestone andterra rossa.Carmel is the leading winery presence in the premium Upper Galilee, following anextensive planting program. Many of Carmels finest wines come from Upper Galileevineyards and after harvesting, the grapes are sent to the nearby Kayoumi Winery.

    SHOMRONThis is Israels most historic wine growing region, benefiting from the Carmel Mountainrange and breezes off the Mediterranean Sea. The main concentration of vineyards is inthe valleys surrounding Zichron Yaacov. Soils are heavy, limey and the climate typicallyMediterranean. Baron Edmond de Rothschild fell in love with this scenic area at the end ofthe 19th century. It was here he chose to plant vineyards in the 1880s and to buildIsraels largest winery in the 1890s. It was also where he was eventually buried. Itremains the heart of the Israel wine industry. Carmels many vineyards in the area are inclose proximity to Zichron Yaacov Wine Cellars.

    SAMSONThe central coastal plain, Shefela and the gently rolling hills of the Judean Lowlands makeup this region. The soils are limestone, alluvial clay and loam and the area has a coastalMediterranean climate: hot, humid summers and warm, mild winters.The fruit from the Samson vineyards are sent to Rishon Le Zion Wine Cellars.

    JUDEAN HILLSThe Judean Hills, west of Jerusalem and the southern Judean Hills have proved to begood wine growing regions for production of high quality wines. The region ischaracterized by warm days and cool nighttime temperature. The soils are thin limey,stony and the higher mountains receive snow in winter.Carmel has premium vineyards in both the Judean Foothills and in Yatir Forest, thelargest forest in Israel, which is situated in the southern tip of the Judean Hills. The YatirForest vineyards, which are up to 900 meters above sea level, also supply the boutiqueYatir Winery.

    NEGEVA popular area for vine growing in ancient times has recently been planted with vineyardsin the higher regions. These range from the central Negev Hills, which is desert, to thesemi arid north-eastern Negev. Soils are sandy to loamy. The temperatures range fromvery hot during the day, with cooler evenings and cold nights. Humidity is low, but thevineyards are often shrouded in mists during the morning hours.Carmel is the pioneer of the Negev with its Ramat Arad vineyard, planted in 1988,

    CARMEL WINERYCarmel Winery is the historic winery of Israel. It was founded in 1882 by Baron Edmond deRothschild, owner of Chateau Lafite in Bordeaux.Carmel owns the two largest wineries in Israel, at Rishon Le Zion, south of Tel Aviv and atZichron Yaacov, south of Haifa.     WINEMAKERLior Laxer is the Chief Winemaker of Carmel Winery. He is a graduate of CFPPA in Beaunein Burgundy. He has experience in both Burgundy and Bordeaux having worked at DomaineComte Armand, Pommard and at Chateau le Bon Pasteur, St. Emilion. He worked withMichel Rolland, one of the most influential winemakers in the world today. He followed thiswith experience in Australia working for Harmans Ridge Estate in the Margaret River regionof West Australia. He joined Carmel in 2003 and was appointed the Chief Winemaker ofCarmel Winery in 2005.He heads a department of eight winemakers, and works closely with a team of expertviticulturists.

    KASHRUTCarmel is renowned for the importance it places on Kashrut. All wines are KosherLemahadrin for Passover and all the year round.A wine that is Kosher is suitable for consumption by orthodox Jews. The winemakingprocess for a kosher wine is not at all detrimental to quality. The same harvesting,

    fermenting, aging and bottling methods apply to both a Kosher and non kosher wine.Carmel wines are considered suitable for Vegans and Vegetarians.

    RISHON LE ZION WINE CELLARSCarmels Rishon Le Zion Wine Cellars, built in 1890, is situated at Rishon Le Zion, south ofTel Aviv. This is the oldest winery in Israel still in use. No less than two future Israeli primeministers worked there, including David Ben Gurion, and the first ever use of electricity andthe telephone in Israel, was at the winery. Rishon Le Zion is now the fourth biggest city inIsrael and it has literally grown around the winery, which sits in the center of a residentialarea. Carmels main blending & bottling facility is at Rishon Le Zion, which is also where thecompanys Head Office is located.

    ZICHRON YAACOV WINE CELLARSCarmels Zichron Yaacov Wine Cellars, built in 1892, is the largest winery in Israel. On thepremises, is a modern, state-of-the-art facility making small quantities of quality wines, fromCarmel's finest vineyards. The most advanced, modern winemaking technology blends in

    with the historic 120 year old cellars. The name of the winery is in memory of Edmond deRothschilds father, Baron James Jacob (Yaacov) de Rothschild, who purchased thefamous Bordeaux winery, Ch?teau Lafite, for the Rothschild family. Zichron Yaacov is acharming town which still has an atmosphere of pre-state Israel. It is situated south of Haifaon the southern slopes of Mount Carmel, overlooking the Mediterranean Sea.

    KAYOUMI WINERYCarmels Kayoumi Winery was built in 2004 to serve Carmels newly planted vineyards inthe Upper Galilee. It is situated at Ramat Dalton, not far from the famous Kayoumi vineyard,source of award winning single vineyard wines. The winery is very modern, compact andthe equipment is absolutely state-of-the-art. It is designed for quality, allowing thewinemaker ease of management with maximum flexibility.

    YATIR WINERYYatir Winery is situated in the northeastern Negev at Tel Arad, an archaeological site with3,000 years of history. Yatir Winery was founded in 2000 and the first wines were launchedin 2004. Yatir Winery is a subsidiary of Carmel Winery, but is managed independentlyhaving its own vineyards and winemaker.     The Tishbi Winery includes a tourist center thatoverlooks the vineyards of the estate. The centerwas recently built and has a Kosher dairy restaurantwith a rich menu based on fresh cheeses from theYaakob and Meiri dairy farms, fresh vegetables andbaked bread right out of the oven.

    The wine store in the tourist center offers ourguests the best wines of the estate. There is a"filling tank" for visitors to fill wine into containersfrom their own home. In addition it is possible topurchase accessories and other wine-gadgets andgifts.

    The tourist center has guided tours interlaced withexplanations about the world of wine and the art oftasting wine.

    The center accepts parties and other events for 100people or more.
